The Protocol
01. Precision Egg Boil
Gently lower cold large eggs into actively boiling water. Maintain a gentle simmer for exactly 9 to 10 minutes, yielding fully set yet jammy and tender centers. Transfer immediately into a prepared ice bath for 5 minutes to halt carryover cooking and cleanly shock the shells for effortless peeling.
02. Dual-Texture Emulsification
Peel the eggs. For classic Konbini consistency, separate the cooked whites and dice them into uniform small bits. In a mixing vessel, whisk the jammy yolks with Kewpie mayonnaise, sugar, milk or heavy cream, sea salt, and finely ground white pepper until completely smooth and emulsified. Gently fold the diced egg whites back into the golden dressing.
03. Assembly & Moisture Sealing
Lay out four slices of fresh Shokupan. Spread softened salted butter evenly over one side of each slice, working all the way to the outer crust margins. Evenly mound the creamy egg salad across two slices, then crown with the remaining bread slices, buttered-side down.
04. Tension Wrap & Final Carve
Tightly wrap each assembled sandwich in plastic film and rest at room temperature for 5 minutes. This sets the crumb and stabilizes the filling. Using a sharp serrated bread knife in gentle slicing strokes without downward compression, remove all crusts, slice cleanly across the diagonal into halves or thirds, and serve immediately.
