The Protocol

01. Mechanical Moisture Extraction

Transfer the tuna to a fine-mesh strainer (or invert and depress the can lid firmly) to squeeze out all excess packing water. The tuna must feel dry to the touch to prevent emulsification collapse.

02. Emulsion & Acid Calibration

In a mixing bowl, combine mayonnaise, sour cream, stone ground mustard, chili-garlic sauce, pickle brine, salt, and pepper (plus MSG/garlic powder if using). Whisk until completely uniform and glossy.

03. Aromatic Integration

Add the diced celery, red bell pepper, red onion, dill pickles, and pickled jalapeños directly into the dressing. Stir well to ensure every aromatic particle is glazed and seasoned.

04. Gentle Fold & Chiffonade

Add the pressed tuna and freshly sliced basil ribbons. Using a fork, gently flake the meat and fold together just until combined, maintaining structural, meaty flakes rather than a paste.

05. Thermal Equilibration

Allow the salad to rest chilled in the refrigerator for 10 to 15 minutes before plating. This brief rest allows the brine and aromatics to diffuse evenly throughout the protein matrix.
